This chef jacket was worn by Shigefumi Tachibe while he served as the executive chef at M café, a cafe style restaurant that he founded as an extension to his line of Chaya restaurants. The uniform resembles a typical white chef uniform worn by most culinary professionals. As he is the executive chef and the owner of the Chaya restaurants, his name Fumi Tachibe, and his title Executive Chef are written under CHAYA on the uniform. As a chef with culinary training in Japan, France and Italy, he brought his skills to the US to develop a menu of fusion dishes incorporating his honed culinary techniques. The Asian fusion food movement which picked up during the 70s in the United States and the growing popularity of organic whole foods that was propelled by the macrobiotic food movement in the 60s, inspired chefs like Shigefumi Tachibe to educate the clienteles’ palate by slowly introducing them to foreign ingredients and cooking styles through fusion dishes. He launched M Café in 2005 to serve contemporary macrobiotic cuisine, a healthy diet and food movement from Japan that has been on the rise in the US since the 60s.
