Today these common kitchen items are called shakers and are used to serve salt or pepper. Dredgers like these were containers with a tightly closing convex or flat lid which was perforated with a number of holes though which the contents could pass through at a controllable rate. The holes in the lids were made either larger or smaller depending on the intended contents. Very fine grained contents, such as flour, would require small holes while larger grained contents required larger holes. Dredgers were often made to hold salt, sugar, flour, or pepper. According to Linda Campbell Franklin: "It is believed that floured meats lasted longer. After roast was turned and done on a spit, it was dredged with flour and turned a few more times to make a bubbly gravy or froth just before serving."
